BBQ Shrimp and Grits
Ingredients
- 2 cups water
- 2 cups whole milk
- 1 cup stone-ground grits
- kosher salt and ground black pepper
- 3 tablespoons butter
- 1½ cups shredded cheddar cheese
- 4 slices bacon, sliced into strips
- 1 pound shrimp, peeled and deveined, rinsed and patted dry
- ½ cup KC Masterpiece® Original BBQ Sauce
- 1 scallion, sliced thin
Bring water and milk to a boil. Add grits and salt and pepper, and cook until liquid is absorbed, stirring occasionally with a wooden spoon, about 15–20 minutes. Remove from the heat and stir in butter and cheese.
Meanwhile, in a large sauté pan, cook the bacon over medium heat until the fat has rendered and the bacon is browned and slightly crisped. Remove from the pan with a slotted spoon and set aside.
Season the shrimp with salt and pepper and sauté in the bacon fat until the shrimp turn pink, about 3–4 minutes. Add BBQ sauce and continue to cook until warmed through and slightly reduced, another minute or two. Spoon grits into individual bowls and top with a portion of the shrimp. Garnish with scallions and serve immediately.
