BBQ Roasted Salmon with Creamy Basil Cucumbers
Ingredients
- 1½ pounds salmon fillet
- kosher salt and ground black pepper
- ¼ cup KC Masterpiece® Original BBQ Sauce, plus more for serving
- 2 large or 3 smaller English cucumbers, scrubbed and sliced ¼-inch thick (If using regular cucumbers, seed and peel before chopping)
- ¼ cup mayonnaise
- ¼ cup sour cream
- 1 cup fresh basil leaves, loosely packed, plus more for serving
- 1 tablespoon fresh lemon juice, plus more to taste
- 1 small garlic clove
Preheat the oven to 400°F.
Place the salmon fillet on a foil-lined baking sheet and season with salt and pepper. Spread the BBQ sauce over the top of the salmon, and place into the middle rack of the oven. Cook for 18–20 minutes, until caramelized on top and cooked through to your liking.
While the salmon is cooking, place sliced cucumbers in a large bowl and season with a little bit of salt. Set aside.
In a food processor or blender, blend the mayonnaise, sour cream, basil, lemon juice and garlic until mostly smooth. Season with just a little bit more salt and pepper, remembering that the cucumbers already have some seasoning, and extra lemon juice if needed. If a looser consistency is desired, thin with a little water. Mix the seasoned cucumbers with the dressing until well coated. Refrigerate until ready to serve.
Serve salmon warm with extra sauce and creamy cucumbers on the side. Scatter torn fresh basil over the top.
